Mar 24, Greek Salad Wrap

I love Greek salads. However, it is not always convenient for me to sit at work and eat a salad. Sometimes I have to eat lunch in the middle of a meeting otherwise I would starve! So, here is my version of a Greek salad wrap. I dont know why it has taken me so long to think of this!

Crumble some feta cheese into small pieces.

Cut a few slices of cucumber into wedges.

Cut a few cherry tomatoes and pitted olives into halves.

(The amounts will vary depending on the size of your wrap or your appetite!)

<il>Take your tortilla wrap, spread thinly with some tzaziki, place the cheese and vegetables on top and roll up tightly.

Wrap with cling film and keep chilled until ready to eat.

Enjoy!

Options : add some red or orange peppers for a change. Instead of tzaziki, try sprinkling some fresh or dried oregano over the top of the vegetables and drizzle with olive oil.
