Recipe/Idea of the moment - Super Spinach Salad
- Baby spinach
- Golden raisins
- Crumbled goat cheese
- Balsamic vinaigrette dressing
Method:
This is a super easy salad, but using golden raisins is really what makes it great. Just toss together the spinach, raisins, and cheese and then take your dressing in a separate container and mix it in at lunchtime. If you live in a major US city where you have a Trader Joe's grocery store, their fat-free balsamic vinaigrette dressing is my favourite for this salad.

My Favourite Sandwich
- Granary bread sliced and buttered
- Crumbly creamy cheese (I use Wensleydale cheese)
- Slices of celery
- 1 small apple
I make up the sandwich with the cheese and celery but leave the apple out. Just before eating, just slice up the apple and add to the sandwich. Any leftover apple, eat for dessert!
The crunchiness of the apples with the creamy cheese tastes great.

No more soggy salad sandwiches
This is an idea rather than a recipe. I got sick of soggy salad in my bagels and wraps yet I love fresh salad.
The answer: I now make up my sandwiches adding the main filling (usually humus, cheese or vegetable pate). I then put my salad in a small container and add to my sandwich just before eating.
Yep, I know it is a really simple idea, but I have only just started to do it! Fresh tasting salad every time.

Feta and Beetroot Salad
Ingredients:
Here is one of my favourite salads. Just alter the proportions to suit your taste.
- 2 large cooked beetroots - cut into wedges
- 1 oz feta cheese (about 30g)
- 1/2 Small red onion - cut into thin slices
- Watercress
- Toasted seeds - I usually use sesame and sunflower seeds
- 1 tablespoon Olive oil
- 1/2 tablespoon white wine vinegar
- Squeeze of lemon juice - to taste
Just put mix the beetroot, watercress and onion together. Crumble over the feta cheese. Mix the oil, vinegar the lemon juice together and drizzle over your salad. Yum!

Classic Italian Salad
Ingredients: - Large juicy ripe tomatoes - cut into thick slices
- Mozzarella - torn into chunky pieces
- Red onion - thinly slices
- Rocket leaves
- Dressing - balsamic vinegar and olive oil (I use 4 parts oil to 1 part vinegar
Method:
A really simple classic salad. Just put the tomatoes, red onion and mozzarella on a plate. Place the rocket leaves on the top and drizzle on the dressing. (If packing in your lunchbox, don't put the dressing on until just before you eat this - otherwise you will get wilted rocket leaves- yuk).
Great served with ciabata or bread of your choice.
As long as you use good quality ingredients, this tastes so fab that you really do need anything else with it.
