Warming Soups

Tasty homemade soups that are quick and easy to make. What could be better for your vegetarian lunchbox on a cold winter's day?

Soup is also a healthy option and will provide you with 1 to 2 portions of your 5 a day.

Here are some of my favourite easy to make recipes. The best thing about these recipes is that you can make up a large batch and freeze into single portions.


Tip: Make sure you keep your soup at a safe temperature by using a good flask. Fill the flask with hot water first and leave for a few minutes. This will warm the flask and improve heat retention.

Tomato and Basil

(Great for anyone on a low fat diet)
  • 2 x 400g tins of plum tomatoes
  • I onion, chopped
  • Vegetable stock – 1 pint
  • Handful of fresh, chopped basil
Put everything, except the basil, into a saucepan and bring to the boil. Simmer gently for approx 20min (until onion is cooked). Season to taste. Blitz in a food processor or liquidiser. Add the fresh basil. Chill or freeze until required.

Options: I often add a handful of red lentils or short grain rice to the ingredients. This thickens the soup and makes it more substantial. Another option is to add a splash of balsamic vinegar at the end of the cooking time.

Tip: This makes a great lunch with some cheese scones.

Potato and Leek

Enough for 6 portions -freezes well

  • 400g Potatoes - peeled and chopped
  • 3 Medium leeks - washed and sliced
  • 800ml vegetable stock
  • Salt and pepper
  • Handful of chopped fresh parsley or chives

Put the potatoes, leeks and vegetable stock in a pan and bring to the boil. Simmer for around 20 min (or until potatoes are cooked). Season to taste and add fresh herbs. Blitz in a food processor. Serve hot.

Option: To make this creamier, cook using only 1.2 litres of stock. Once cooked, add 300ml of milk (or half milk and half cream for a treat!)
